My mom has always been a great cook. I grew up watching her make many wonderful dishes. She "mentored" me in cooking. One night, Mom and I went and watched the movie Julie and Julia together and it inspired me to do a recipe blog. Many of them are new inventions, as well as some of Mom's. I like to be creative. Corned Beef Hash
This one is pretty basic. It was first taught to me around the age of 15 by Greg's Mom. It was an OLD family recipe. Greg's great-grandmother used to make it, and who knows before her? Anyway, it was one of Grandmother May's specialties, and then Greg's Mom's. My family has always loved it...it is simple, and fairly inexpensive, although the price of hash has gone up! $4,88 per can.
Put some oil in a large skillet.
Chop up 4-5 large potatoes and an onion. Fry in the oil.
Add 1 can corned beef and break up.
Add salt and pepper to taste.
Add about a cup of water. Let it cook down. Add another cup of water and let it cook down again.
Serve over rice and make some cornbread!
