My mom has always been a great cook. I grew up watching her make many wonderful dishes. She "mentored" me in cooking. One night, Mom and I went and watched the movie Julie and Julia together and it inspired me to do a recipe blog. Many of them are new inventions, as well as some of Mom's. I like to be creative. Shrimp Salad in a Pita
Another "concoction" that turned out well...so here is the recipe so I won't forget!
Boil one egg. When done, before you empty the water, boil 6-8 large shrimp in the water.
Chop:
Egg, shrimp, 1/4 red pepper, 1/4 onion, 1 stalk celery, 6-8 walnut halves.
Add:
2-3 T. olive oil
approx 4 T. rice vinegar
1/4 cup Feta cheese
Toss all together and spoon into whole wheat pita halves. Line each pita with a handful of baby spinach leaves.
I ate mine with a baked sweet potato.
Healthy and delicious!
