Shrimp and Sausage Street Tacos


I made these tonight, using ingredients I already had in the fridge.  My husband loved them!

Green, Red, Yellow Pepper strips
Onion strips
Saute' in Olive oil with 1/2 lb Conecuah Sausage cut into pieces
Sprinkle in a package (or half) of Fajita Seasoning Mix and a little water
After everything is cooked, add in 1 lb. uncooked shrimp
Cook until Shrimp is pink
2 T. (or to taste) Tack Sauce (or other pepper sauce)

Using small (street taco) size flour tortillas, cut in half some cherry tomatoes
Layer them on each tortilla with a few fresh spinach leaves.
Put shrimp, pepper and sausage mixture onto each taco

additional: jalapeños, sour cream, shredded cheddar/mozzarella cheese
