Cajun Noodles

This is another "concoction" that just turned out so good, I had to write it down!  I worked with what I had, and we just really liked it.  A happy surprise.

First, I made a pan of sweet cornbread in a cast iron skillet.  It called for milk, which I was out of, but I found a can of evaporated milk.  I used most of it (8 oz.) and almost threw the other 2 oz. away, but decided not to.  I'm glad I saved it.  I used it in the noodle dish.

In a skillet, I put a couple of tablespoons of olive oil.  I chopped one onion and put it in, along with a pound of Conecuh Sausage, cut up.  Sauteed that with a chopped garlic clove.  Added a can of chili-style tomatoes.  Then I poured in the rest of the milk.

In the meantime, I cooked about 8 oz. egg noodles.  I added the noodles, and a lb. of cooked shrimp to the mixture.

Then I sprinkled on a couple of Tablespoons of Cajun seasoning.

This was SO good!
