Sometimes when it seems like we have nothing in the refrigerator or pantry but just don't want to go to the store...these are the times we are forced to get creative and can come up with a winner. My kids have always called these my "concoctions." This one turned out really well! My husband the mailman had brought in a whole stash of tomatoes and various kinds of peppers from one of his customers. I didn't know what to do with all of them! But this made great use of an abundance of fresh produce.
4 cloves garlic chopped
1/2 - 1 onion chopped
2 peppers (green or other mild peppers)
1 fresh jalapeno pepper
2 T. oil
1 lb. sirloin or round steak, cut into strips
4-5 fresh tomatoes
1 8-oz. cream cheese
1 c. low-fat shredded cheddar cheese
1/2. c. low fat sour cream
1/2 packet taco seasoning
1/2 lb. rotini noodles
boil and drain pasta. set aside.
saute' meat, onions, garlic, and peppers in oil
add tomatoes and cook down
sprinkle taco seasoning over mixture and stir in.
stir in cheeses and sour cream until melted
stir in pasta and serve.
You can easily double this recipe.
