I love combining recipes and creating something completely new. That's what I did tonight. I couldn't decide what to cook, so I created a cross between chili and tacos with a pasta and cheese layer. This is a relatively healthy meal. The only thing a little bit fattening was some white Velveeta cheese.
1/2 lb. lean ground meat
1/2 lb. ground turkey meat
4 chicken tenderloins
1 onion
1/2-1 green pepper
3 small red peppers
2 cloves garlic
Cook meat and vegetables in 1 T. olive oil
Stir in 1 packet taco seasoning mix.
add to meat mixture:
1 can mexican style tomatoes
1 can Rotel tomatoes
(or 2 of either one)
1 can kidney beans
boil:
1 box higher fiber pasta (well...not actually the box, just the pasta - you won't need that much fiber)
drain pasta and put in a bowl
add about 1 cup of greek-style plain yogurt (replaces sour cream and i can't tell the difference)
stir in 8 oz or so white Velveeta cheese (if you don't have it, just substitute some cheddar)
Layer all of the pasta on the bottom of a casserole pan
Pour taco meat mixture over the top
If you want to, you can top with some cheddar cheese.
Bake in oven for about 20 minutes at 400.
