"Heart Healthy" Pepper Steak


For Valentines Day, Greg and I decided to go hear the "Cloud 9" Jazz Orchestra.  They sound so much like my dad's band.  It was quite nostalgic for me.  Since we've been trying to eat healthier, we decided to eat at home before going to hear the band.  I made us a "Heart Healthy" Valentines Day meal.  It was so good...Didn't even feel like we were cutting back on anything.  We really aren't.  Just eating better.  Here's the two recipes I made that night, and a few pics to go with them.




Heart Healthy Pepper Steak

1/2 - 1 lb. lean round steak
2-3 cloves chopped garlic
1 green pepper, sliced into strips
1 red pepper, sliced into strips
1 red onion, sliced into strips
Sprinkle generously with greek seasoning
Saute' in about 1 T. Olive Oil till meat is brown and veg. are crisp/tender
deglaze pan with some sherry wine
add 1 can beef consume'
stir 2 T. cornstarch into about 1/4 c. water and pour in to mixture to thicken

Serve over whole wheat egg noodles.

Notice, I put the red peppers into a shape of a heart...:-)  Whatever...





On the side, I served

Sauteed Spinach with Orange, Almonds and Canadian Bacon

In 1 T. Olive oil, saute' 2-3 pieces chopped canadian bacon, a few slivered almonds, a clove of garlic.

Add a couple of handfuls of fresh spinach and 1/2 orange cut up.  Squeeze the juice in.  Let spinach wilt and then serve.


Well, maybe were weren't quite as old as most of the people there, but, after all, I was raised on Big Band/Jazz Music!
