Barbecue and Blue Cheese Salmon and with Spinach, Walnut, Mushroom Quinoa

I decided to make a really healthy lunch for Mom and me today.  It turned out surprisingly well, so I figured I'd better write the recipe down now so I don't forget it.  We had sweet potatoes with it...those are always good and healthy.  I wanted to make a quinoa "concoction."  Quinoa has become one of my favorites because it is delicious, and I know that it is a complete protein.  It is a very good-for-you grain.  Mom just can't get used to quinoa - it's a "new" thing and too different to what she is used to, so I simply made her some fresh spinach with walnuts cooked in olive oil with garlic and chicken broth.  She loved it.  But anyway, to go with these tasty sides, was the main dish, fresh salmon with barbecue seasoning and blue cheese crumbles.  The smoky combination of the barbecue and the salty blue cheese is so good!  Here are my two new recipes:

Barbecue Salmon with Blue Cheese 

Saute' fresh salmon in one T. olive oil.  Sprinkle with a little garlic powder and barbecue seasoning.  Pour some chicken broth into the pan.  Turn Salmon after cooked on one side and cover to let it cook through.  When done, add a few blue cheese sprinkles to the top.

Serve with:

Spinach, Mushroom and Walnut Quinoa

Cook one cup quinoa according to package directions.  Set aside.

In a separate large skillet, saute' an onion, 3 cloves chopped garlic and some chopped mushrooms and chopped red pepper and a few walnuts.  Add some chicken broth and let this all cook down.  Then add 3-4 large handfuls of fresh spinach.  Continue cooking until the spinach has reduced down and is a bright green color.  Then add the cooked quinoa to the mixture.  Add a little more chicken broth if needed.  It should be served when it is a similar consistency to rice.
