Italian Sausage and Three-Cheese Casserole

Here's a new one today...had so much fun "inventing" this...although what it is, actually, is a mixture of several different recipes I have tried over the years.  The creamy cheeses mixed with the pasta is so wonderful under that rich red sauce that has been flavored by the Italian Sausage.

Saute' together in 2 T. Olive Oil:

1 lb. Italian link sausage (sear it till it's well-browned on all sides).
1/2 green pepper, chopped
1 small onion, chopped
1 large clove garlic, chopped

Add in 1 jar of Classico or favorite Italian Red Sauce
Simmer with lid for a while...at least 20 minutes.

Mix together:

1 box Penne Pasta, boiled and drained
1 8 oz. box softened cream cheese
1/2 cup sour cream
1 cup shredded Mozzarella
1/2 cup Parmesan

Stir until cheeses are melted and blended with the pasta.

Pour cheesy pasta into a large baking dish.
Pour Sauce and Sausage right over the top of pasta.
Spread sauce around till it covers pasta.
Top with more Mozzarella and Parmesan

Bake in 400 degree oven for 30 minutes or until sausage is fully cooked and cheese is bubbly.
Serve with Texas or garlic toast
