I said recently that I would like to eat like a French woman. I have been reading about how they only use the best of ingredients, eat slowly, savor every bite and have no reason to overeat. I had almost forgotten what I said...well, actually, I did forget it while preparing to cook dinner tonight. But by the time I had the meal on the table, I was eating like the French woman I had envisioned. I was going to make a taco soup, but it morphed before I got very far in my cooking. How could I go from taco soup to a French meal is beyond me. But when I realized I didn't have the right vegetables for the taco soup - corn, black beans, etc... I decided to go in a different direction. I'm so glad I bought that bottle of Marsala wine a while back! And then we had some Cabernet Sauvignon to drink with it. Totally French woman here!!
Here is what my dinner turned into:
Chicken, Mushroom and Potato Marsala
2-3 chicken cutlets
1 onion, chopped
Cook together in about 1/2 cup chicken broth
Add some fresh mushrooms
Add about 3/4 cup Marsala wine
Chop about 5 small red potatoes
Simmer all together, covering with lid,
until chicken is cooked and potatoes are tender.
Stir in 1/4 cup plain yogurt
To serve, place chicken cutlets onto plate and spoon potatoes, onions and sauce over it.
Montreal Roasted Brussels Sprouts
Preheat oven to 450
Cut each one in half and place in oblong dish. Sprinkle with Montreal Chicken seasoning. Drizzle with olive oil. Stir with hands.
Bake till tender.
