Turkey and Bacon Taco Pasta

2-3 T. Olive Oil
1 lb. Ground Turkey
1 clove garlic, chopped or garlic powder
1 can Rotel tomatoes
1 can Fire Roasted Tomatoes
1 packet Chipotle Taco Seasoning
1/2 cup water
12 oz. pasta (spiral or rotini or penne)
1 cup sour cream
4 slices bacon, fried crisp and chopped
extras:  fresh spinach, chopped avocado, sour cream, extra sharp cheddar

Saute' turkey meat and onions and garlic in the olive oil.
Add both cans tomatoes
Add Taco Seasoning and water
Add dry pasta
Cover and stir until Pasta is tender
Stir in Sour cream and bacon

Serve over a bed of fresh spinach leaves
Top with chopped avocado, sour cream and shredded extra sharp cheddar
