Riced Cauliflower Sushi Bowl


This is all the tastes of my favorite sushi, in a stir-fry bowl, without the complicated process of making the sushi.  I really liked it, and felt good eating it.  It's easy and quick and healthy.  You could vary the ingredients to resemble your favorite sushi.  Get creative!

2 T. sesame oil
2 green onions, chopped
1/2 red pepper, chopped
1 large carrot, chopped
2 cloves garlic, chopped
3 leaves raw cabbage, chopped
1 bag frozen riced cauliflower
1/4-1/2 cup teriyaki sauce (or lite soy sauce)
1/4 cup chopped walnuts
2 oz. cream cheese
2 oz. smoked salmon

Saute' veggies in sesame oil.  Add frozen riced cauliflower.  When cauliflower is warmed through, stir in teriyaki, and then cream cheese until blended and melted, add chopped walnuts.  Stir in smoked salmon.
