Who needs takeout when you can make something quick, healthy and delicious at home? I never know exactly what I'm going to make when I start pulling out ingredients. But this is what I wound up with tonight. It was very filling and low cal and good for you, with lots of nutrients.
I use a bag of frozen large shrimp, peeled, deveined with tails. First thing I do is open the bag and run some hot water in it to let them start to thaw.
Start by chopping a small onion, and some red and green peppers into small chunks. Also chop a couple of cloves of garlic.
Pour about a Tbsp. sesame oil into a skillet and saute' the vegetables while you peel the tails off the shrimp. After the veggies are tender, add in the shrimp and a couple of cups of fresh broccoli. Add some Teriyaki sauce over everything. Cover, stirring off and on until the shrimp is pink and the broccoli is crisp/tender.
Serve over brown rice. I used the boil-in-bag. Quick, easy and better than take-out.
