1 lb stew meat
1/2 chopped onion
2-3 T. flour
2 carrots chopped
2 T oil
2 cloves garlic chopped
1 T. Barbecue seasoning
Salt and Pepper
2 tsp. cayenne pepper or to taste
1/2 - 3/4 cup fresh mushrooms
1 can beef consume'
1 can diced tomatoes
2-3 T. Worstershire sauce
1-2 chopped banana peppers with about 2 T. juice
6 or so small red potatoes, chopped
Cover stew meat with water and bring to a boil in a pot, then reduce to simmer.
Simmer with lid on for up to an hour. It will become more tender as it simmers.
After a while, take the lid off and turn it up until the water evaporates.
Pour the oil into the pan
Add onions
Sprinkle flour over the meat and onions and stir to coat
Sear the meat
Add in mushrooms and carrots and continue to cook.
Season with Salt, Pepper, Cayenne Pepper, and barbecue seasoning
chop up the banana peppers and add with juice to pot
Add Worstershire sauce
Add the beef consume' and canned tomatoes
Cook until carrots are tender and gravy is thickened.
Add chopped red potatoes. Cook until tender.
Serve over Jasmine Rice
